Ham and Cheese Crepes with Bechamel

- 1 cup all-purpose flour
- 1/4 tsp salt
- 1 1/2 cups milk
- 3 eggs
- 1/4 cup melted butter
- 1 cup finely grated Swiss cheese
- 1/2 lb thinly sliced ham
- 4 tbsp butter
- 4 tbsp flour
- 2 cups milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- Fresh parsley, chopped for serving

Preheat oven to 375°F.

In a blender, combine flour, salt, milk, eggs, and melted butter. Blend until smooth.

Heat a non-stick skillet over medium heat. Pour a 1/4 cup batter into the skillet and swirl to coat the bottom. Cook until the edges are golden brown, flip, and cook for an additional 30 seconds. Remove from heat and repeat until no batter remains.

In a saucepan, melt butter over medium heat. Add flour and stir until mixture is smooth. Gradually add in milk while stirring constantly. Add salt and nutmeg and continue stirring until the sauce thickens.

Spread 1 tbsp bechamel sauce onto each crepe. Top with ham and cheese, and roll up tightly.

In a baking dish, pour remaining bechamel sauce onto the bottom. Place crepes onto the sauce, seam-side down. Bake for 15-20 minutes until golden and bubbly.
