ingredients
- 1 lb puff pastry (thawed)
- 2 large onions, finely sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup grated cheddar cheese
- 1 egg (beaten, for egg wash)
- 1 tablespoon fresh parsley, chopped (optional)
steps
- 1.
Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- 2.
In a large skillet, heat olive oil over medium heat and add the sliced onions.
- 3.
Sprinkle with salt and cook until the onions are soft and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.
- 4.
Once the onions are caramelized, remove from heat and let cool slightly.
- 5.
In a bowl, combine the cooked onions, grated cheddar cheese, black pepper, and parsley (if using). Mix well until fully combined.
- 6.
On a floured surface, roll out the puff pastry to about 1/8 inch thick and cut into 5-inch squares.
- 7.
Place a generous spoonful of the filling in the center of each pastry square.
- 8.
Fold the pastry over to form a triangle and press the edges together to seal. Crimp with a fork for a decorative touch.
- 9.
Brush the tops of the pasties with the beaten egg for a golden finish.
- 10.
Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up.
- 11.
Allow to cool slightly before serving. Enjoy warm or at room temperature!
