ingredients
- 1.4 lbs of chicken tenders
- 1 white onion, diced
- 1 red onion, diced
- 2 russet potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 30 oz of tomato sauce
- 30 oz of chicken broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp red pepper flakes (optional)
- 3 small tomatoes, diced
steps
- 1.
In a large pot, sauté the white and red onions in a bit of olive oil over medium heat until translucent, about 5 minutes.
- 2.
Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
- 3.
Stir in the chicken tenders and cook until lightly browned on all sides, about 5-7 minutes.
- 4.
Add the diced potatoes, diced tomatoes, tomato sauce, and chicken broth into the pot.
- 5.
Season with salt, black pepper, paprika, oregano, thyme, and red pepper flakes (if using). Stir well to combine.
- 6.
Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 30-40 minutes, or until the potatoes are tender and the chicken is cooked through.
- 7.
Stir in the chopped parsley just before serving to add freshness.
- 8.
Taste and adjust seasoning if necessary, then serve hot with crusty bread for a complete meal.
