Hearty Chili Fiesta

"Kids Chili 2 lbs 80-85% fat ground chuck 1 medium sweet onion (diced) 2 small green bell peppers (diced) 3 cloves garlic (finely diced) 3 TBSP EVOO 1 TBSP + 1 Tsp Dark Chili Powder 2 Tsp Cumin 1 Tsp Oregano 1 Tsp Salt 1/2 Tsp finely ground black pepper 1 TBSP Sugar 1 28 oz can Crushed Tomatoes 2 15 oz cans Diced Tomatoes Heat EVOO over medium-high heat until rippled Sauté Peppers and Onions while for 5 minutes stirring every minute Add garlic and sweat for 60 seconds or u til you can smell the garlic Add beef and brown partially, mincing ground about 50% Add spices on top of the beef and then stir/fully mince and brown until cooked through Add crushed tomatoes and diced tomatoes plus one diced tomatoes can full of water Stir and bring to boil Reduce heat to medium-low and boil for 45 minutes Serve as is, or with shredded Mexican cheese, sour cream and tortilla chips."

Heat EVOO over medium-high heat until rippled.

Sauté peppers and onions for 5 minutes, stirring every minute.

Add garlic and sweat for 60 seconds or until you can smell the garlic.

Add ground beef and brown it partially, mincing the meat about 50%.

Sprinkle the spices on top of the beef, then stir and fully mince until cooked through.

Add crushed tomatoes, diced tomatoes, and one can full of water.
- 7.
Stir well and bring to a boil.
- 8.
Reduce heat to medium-low and let it simmer for 45 minutes.Serve as is, or top with shredded Mexican cheese, sour cream, and tortilla chips for a delightful chili fiesta experience.
