Electrifying Chili Explosion
ingredients
- 1 lb ground beef or plant-based alternative
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 tbsp chili powder
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp ancho chili powder
- 1 tsp chipotle pepper in adobo sauce, minced
- 1 bell pepper, diced
- 1 jalapeño, diced (optional)
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving

Heat olive oil in a large pot over medium heat.

Add diced onion, garlic, and bell pepper; sauté until softened.

Stir in ground beef or plant-based alternative; cook until browned.

Add chili powder, smoked paprika, cumin, ancho chili powder, and chipotle pepper; mix well.
- 5.
Pour in crushed tomatoes and add both black and kidney beans; stir to combine.
- 6.
Bring the chili to a gentle simmer, reduce heat, and cover.
- 7.
Allow to simmer for 30-40 minutes, stirring occasionally.
- 8.
Season with salt and pepper to taste.
- 9.
Serve hot, garnished with fresh cilantro and lime wedges.
