Hearty Harvest Chicken Stew

A rustic and flavorful chicken stew packed with tender boneless thighs, vibrant vegetables, and aromatic herbs. Optionally topped with fluffy dumplings for a satisfying twist. This comforting one-pot meal is perfect for chilly evenings.

- 1.5 lbs boneless chicken thighs, cut into chunks
- 1 large onion, diced
- 3 celery stalks, chopped
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 bell pepper, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)Optional Dumplings:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp unsalted butter, melted

In a large pot, heat oil over medium-high heat. Add chicken pieces and brown them on all sides. Remove from pot and set aside.

In the same pot, sauté onions, celery, and bell pepper until softened, around 5 minutes. Add minced garlic and cook for an additional minute.

Return the chicken to the pot and add mixed vegetables, chicken broth, onion powder, garlic powder, salt, and pepper. Stir well.

Bring the stew to a boil, then reduce heat to low. Simmer, covered, for 30 minutes, allowing flavors to meld.

If preparing dumplings, combine flour, baking powder, and salt in a separate bowl. Stir in milk and melted butter until a sticky dough forms.
