Savory Slow-Cooked Beef Neck Bones

- 2 lbs beef neck bones
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish

Heat olive oil in a large skillet over medium-high heat. Add beef neck bones and brown them on all sides. Transfer to a slow cooker.

Reduce heat to medium and add onion, garlic, carrots, and celery to the skillet. Sauté for 5 minutes until slightly softened. Deglaze the skillet with red wine, scraping up any browned bits.
