ingredients
- 1 cup brown lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 large carrots, chopped
- 2 stalks celery, chopped
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste

Rinse the lentils and soak them in water for 30 minutes.

In a large pot, heat some olive oil and sauté the onion and garlic until fragrant.

Add the carrots, celery, bell pepper, and zucchini. Cook for 5-10 minutes until they begin to soften.

Drain the lentils and add them to the pot. Stir to combine.
