Mint & Basil Herbal Mead

ingredients
- 1 gallon water
- 3 cups alfalfa honey
- 1 cup fresh mint leaves, loosely packed
- 1 cup fresh basil leaves, loosely packed
- 1 packet mead yeast (such as Lalvin D-47)
- Juice of 2 lemons
- 1 teaspoon yeast nutrient
- Optional: Additional herbs for garnish

Boil 1 gallon of water in a large pot.

Remove from heat and stir in the alfalfa honey until completely dissolved.

Allow the mixture to cool to room temperature, then transfer to a sanitized fermentation vessel.

Add the fresh mint and basil leaves, lemon juice, and yeast nutrient to the honey-water mixture.
- 5.
Sprinkle the mead yeast evenly over the surface and gently stir to combine.

Seal the fermenter with an airlock and let it ferment in a dark, cool space for about 2-3 weeks.

After fermentation, strain out the herbs using a fine mesh strainer or cheesecloth.

Transfer the mead to bottles, leaving some headspace, and optionally, add additional herbs for garnish.

Allow the bottles to age in a cool place for another 2-4 weeks before enjoying chilled!
