A refreshing mead infused with balm, rosemary, and ginger, sweetened with honey and a hint of lemon. Perfect for a summer gathering or as a homemade gift.
ingredients
- 1 gallon water
- 1 sprig balm
- 1 sprig rosemary
- 1/2 oz. root ginger
- Juice of 1 lemon
- 5 lb. honey
- Mead yeast

In a large pot, bring water to a boil and add balm, rosemary, and ginger. Let simmer for 30 minutes.

Remove herbs and ginger, then stir in lemon juice and honey until dissolved. Let cool to room temperature.

Transfer mixture to a clean, sterilized container and sprinkle yeast on top. Cover with a cloth and let ferment for 4-6 weeks.

Strain out any solids, then bottle and seal. Allow to age for at least a month before serving.
