ingredients
- 8-10 lbs fully cooked bone-in ham
- 1 cup crushed pineapple, drained
- 1 cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1/2 cup pineapple juice
- Whole cloves for studding (optional)
steps
- 1.
Preheat your oven to 325°F (160°C).
- 2.
Score the surface of the ham in a diamond pattern, about 1/4 inch deep. If desired, stud with whole cloves at the intersections.
- 3.
In a medium bowl, mix the crushed pineapple, brown sugar, cinnamon, ground cloves, honey, Dijon mustard, and pineapple juice until well combined.
- 4.
Place the ham in a roasting pan and spoon the pineapple glaze generously over the top.
- 5.
Cover the ham loosely with aluminum foil and bake for 1.5 to 2 hours, basting every 30 minutes with the pan juices.
- 6.
Remove the foil during the last 30 minutes of cooking to allow the glaze to caramelize and develop a golden crust.
- 7.
Once cooked through, remove from the oven and let rest for 15 minutes before slicing. Serve with extra glaze on the side.
