Pomegranate Melomel

Indulge in a unique honey wine that marries the floral notes of orange blossom honey with the tartness of pomegranate. ingredients
- 10 lbs orange blossom honey
- 5 lbs wildflower honey
- 2 tsp yeast nutrient
- 1 packet Champagne yeast
- Water (to make up to 5 gallons)
- 1 gallon of pomegranate juice (pure or freshly juiced from 14 lbs of pomegranates)
- 1 Campden tablet

Sanitize all equipment thoroughly to prevent unwanted bacteria.

In a large pot, combine both honeys with around 1 gallon of water and heat gently until dissolved to create a must.
- 3.
Once cooled, pour the must into a sanitized fermentation vessel.
- 4.
Add the pomegranate juice to the must in the fermentation vessel.
- 5.
Crush the Campden tablet and add it to the mixture for sulfit protection.
- 6.
Let the mixture sit for 24 hours to allow the Campden tablet to work.
- 7.
After 24 hours, sprinkle the Champagne yeast and yeast nutrient over the must without stirring.
- 8.
Seal the fermentation vessel with an airlock and allow fermentation to take place at room temperature.
- 9.
Monitor fermentation for about 2-4 weeks or until bubbling has significantly slowed.
- 10.
Once fermentation is complete, siphon the melomel into bottles, leaving sediment behind.
- 11.
Age the bottles in a cool, dark place for at least 3-6 months for optimal flavor.
