- 35 lbs Monarch's Choice Clover honey
- 2.5 tsp acid blend
- 4.5 tsp yeast nutrient
- 2 tsp Irish Moss
- 1 packet Lalvin EC-1118 yeast
- 5 gallons filtered water

In a large sanitized fermentation vessel, dissolve the Clover honey in 5 gallons of warm filtered water.

Stir the mixture thoroughly until fully incorporated, creating your must.

Add the acid blend and yeast nutrient, stirring until mixed well.

Bring the mixture to a gentle boil, then add the Irish Moss, boiling for 15 minutes to help clarify the mead.

Remove from heat and cool the must to around room temperature.

Once cooled, transfer the must to a sanitized fermenter, leaving enough space for foam during fermentation.

Hydrate the Lalvin EC-1118 yeast according to package instructions, then sprinkle it into the must.

Seal the fermenter with an airlock and store in a dark, cool place to ferment for 4-6 weeks, until bubbling slows.

Once fermentation is complete, siphon the mead into a sanitized secondary vessel, avoiding sediment.
