Citrus Cascade Blond Ale

- 8 lbs Pale Malt (2-row)
- 1 lb Munich Malt
- 1 lb Crystal Malt (20L)
- 0.5 lb Flaked Corn
- 1 oz Cascade hops (60 minutes)
- 1 oz Cascade hops (15 minutes)
- 1 oz Cascade hops (dry hop, 5 days)
- 0.5 oz Orange Zest (at flameout)
- 0.5 oz Lemon Zest (at flameout)
- 1 packet American Ale Yeast (e.g., Safale US-05)
- 5 oz Corn Sugar (for bottling)
- Water (as needed)

Heat 3.5 gallons of water to 165°F (74°C) for mashing.
- 2.
Add the grains and maintain temperature at 152°F (67°C) for 60 minutes.
- 3.
Sparge with about 3 gallons of water to collect around 6 gallons of wort.
- 4.
Bring the wort to a boil and add the first 1 oz of Cascade hops.
- 5.
After 45 minutes, add the second 1 oz of Cascade hops.
- 6.
At flameout, stir in orange and lemon zest for citrus aroma.
- 7.
Cool the wort quickly to around 70°F (21°C) using a wort chiller.
- 8.
Transfer to a sanitized fermentation vessel, add yeast, and seal with an airlock.
- 9.
Allow to ferment for 1-2 weeks at 68-70°F (20-21°C).
- 10.
After fermentation is complete, add dry hops and let sit for 5 days.
- 11.
Bottle with 5 oz of corn sugar dissolved in boiling water.
- 12.
Age for 2 weeks before chilling and enjoying your Citrus Cascade Blond Ale.
