ingredients
- 4 bone-in, skin-on chicken thighs
- 1/4 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 cups jasmine rice
- 4 cups broccoli florets
- 2 cups water
- Sesame seeds for garnish (optional)
- Fresh cilantro for garnish (optional)
steps
- 1.
Preheat your oven to 400°F (200°C).
- 2.
In a medium bowl, whisk together honey, soy sauce, garlic, ginger, apple cider vinegar, olive oil, sesame oil, salt, and pepper.
- 3.
Place the chicken thighs in a baking dish and pour the honey garlic sauce over them, ensuring they are well coated.
- 4.
Bake the chicken thighs in the preheated oven for 30-35 minutes, or until they reach an internal temperature of 165°F (75°C) and are caramelized on top.
- 5.
While the chicken is baking, rinse the jasmine rice under cold water until the water runs clear.
- 6.
In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- 7.
In a steamer basket over boiling water, steam the broccoli florets for 5-7 minutes until tender but crisp.
- 8.
Once the chicken is done, let it rest for a few minutes, then slice and serve with the jasmine rice and steamed broccoli, drizzling additional sauce over the chicken if desired.
- 9.
Garnish with sesame seeds and fresh cilantro before serving.
