- 1 pkg Wyeast 4783 Sweet White Wine Yeast

- 1.
Peel and chop potatoes into small pieces.
- 2.
Boil potatoes and pearl barley until soft, then strain and mash.
- 3.
Mix honey, sultanas or grape juice, acid blend, and lemon or orange juice.
- 4.
Add mashed potatoes and barley to the mixture.
- 5.
Cool to room temperature and stir in wine yeast.

Ferment in a gallon fermenter for 3-4 weeks.
