- 12 lbs Pale Malt
- 1 lb Crystal Malt (60L)
- 1 lb Chocolate Malt
- 0.5 lb Carafa Malt
- 0.5 lb Munich Malt
- 1 lb Honey (added at flameout)
- 1 oz East Kent Goldings Hops (bittering)
- 0.5 oz Fuggle Hops (aroma)
- 1 packet of English Ale Yeast (e.g., Wyeast 1098)
- 1 Whirlfloc Tablet (optional, for clarity)
- Priming sugar (for bottling)

Start by heating 3 gallons of water in your brew kettle to 165°F.

Add the crushed grains in a grain bag to the water and steep for 30 minutes.

Remove the grain bag and bring the wort to a boil.

Once boiling, add the East Kent Goldings hops and boil for 60 minutes.

Add the Fuggle hops during the last 10 minutes of the boil.

At flameout, stir in the honey until fully dissolved.

Cool the wort quickly with a wort chiller or an ice bath.
- 8.
Transfer the cooled wort into a sanitized fermentation vessel and top up with water to reach 5 gallons.

Pitch the yeast and seal the fermenter with an airlock.
- 10.
Ferment at approximately 68-72°F for 1-2 weeks, or until fermentation is complete.

Once fermentation is done, bottle with priming sugar and let carbonate for 2 weeks.
