Honey Malt Porter

- 6 lbs dark malt extract
- 1 lb Munich malt
- 0.5 lb crystal malt (60L)
- 0.5 lb chocolate malt
- 0.25 lb roasted barley
- 2 oz Northern Brewer hops (bittering)
- 1 oz Fuggle hops (aroma)
- 1 cup honey
- 1 packet of English ale yeast
- Priming sugar (for bottling)
- Water (to make 5 gallons)

In a large brew kettle, bring 2.5 gallons of water to a boil.

Steep Munich, crystal, chocolate, and roasted barley malts in a grain bag for 30 minutes, then remove.

Stir in the dark malt extract and Northern Brewer hops, and bring to a boil again.

Boil for 60 minutes, adding Fuggle hops during the last 15 minutes of the boil.

Remove from heat and cool the wort quickly using an immersion chiller or ice bath.

Once cooled, transfer the wort to a sanitized fermenter and top off with water to total 5 gallons.

Add the honey and mix until dissolved.

Pitch the yeast into the fermenter and seal with an airlock. Ferment for about 1-2 weeks at a steady temperature (65-70°F).

After fermentation, transfer the beer to a bottling bucket, adding priming sugar to carbonate.
- 10.
Bottle and cap your porter, then let it carbonate for another 2 weeks before enjoying.
