Hopped Honey Ale

Brew your own Golden Honey Ale, a smooth and slightly sweet beer infused with the richness of honey. - 6 lbs Pale Malt
- 1 lb Caramel Malt (20L)
- 0.5 lb Honey Malt
- 1 lb Honey (added during fermentation)
- 1 oz Cascade Hops (bittering)
- 0.5 oz Saaz Hops (aroma)
- 1 packet American Ale Yeast (like Safale US-05)
- 5 oz Priming Sugar (for bottling)
- 5 gallons filtered water

Heat 3 gallons of water to 165°F and mash in grains for 60 minutes.

Sparge with enough water to collect 6.5 gallons of wort in your brew kettle.

Bring wort to a boil and add the Cascade hops; boil for 60 minutes.

After 50 minutes, add the Saaz hops (for aroma).

Remove from heat and cool the wort rapidly to about 70°F.

Transfer cooled wort to a sanitized fermenter, topping up with water to a total of 5 gallons.

Add honey to the fermenter for added sweetness and depth.

Pitch the yeast and seal with an airlock, fermenting at 68-72°F for 1-2 weeks.

Once fermentation is complete, bottle with priming sugar and let carbonate for 2 weeks.
