ingredients
- 3–4 whole vanilla beans
- 3–4 cinnamon sticks
- 8 lbs. (3.6 kg) alfalfa honey
- 4 lbs (1.8 kg) wildflower honey
- 1 tbsp. yeast nutrient
- 5g Red Star Premier Classique (Montrachet) yeast
steps
- 1.
Split vanilla beans lengthwise, add to a sanitized fermentation vessel with cinnamon sticks
- 2.
Heat honey in a pot, add to the fermentation vessel
- 3.
Add yeast nutrient, top up with water to desired volume, cool to room temperature
- 4.
Activate yeast per package instructions, add to the vessel, seal with an airlock
- 5.
Ferment for 4-6 weeks, rack to a secondary vessel, age for another 6-12 months
- 6.
Bottle, age further if desired, enjoy!
