- 3 lbs honey
- 1 cup chopped ginger root
- 3-4 whole cinnamon sticks
- 1 packet of champagne yeast
- 1 gallon water

In a large pot, heat 1 gallon of water to 160°F.

Stir in the 3 lbs of honey until fully dissolved.

Add the 1 cup of chopped ginger root and the 3-4 whole cinnamon sticks to the mixture.

Allow the mixture to steep while cooling to room temperature, enhancing the cinnamon infusion.

After cooling, remove the cinnamon sticks and transfer the mixture to a fermentation vessel.

Add the packet of champagne yeast and stir gently to combine.

Cover the fermentation vessel with an airlock and let it ferment for 4-6 weeks.

After fermentation, rack the mead into a secondary fermentation vessel to remove sediment.

Age the mead for an additional 2–3 months for flavor development.

Once aged, bottle the mead and label each bottle.

Allow the bottled mead to age for 3-6 more months before serving for optimal flavor.
