ingredients
- 1 gallon fresh apple cider
- 2 lbs regular honey
- 1 cup dried apple blossoms
- 1 tsp cinnamon
- 1 packet champagne yeast
- 1/2 tsp nutrient (optional)
- Water (to top off if needed)
- Clean, sanitized fermentation vessel
steps
- 1.
In a large pot, gently heat the apple cider without boiling, just enough to dissolve the honey thoroughly.
- 2.
Stir in the regular honey and dried apple blossoms until well combined. Allow to cool to room temperature.
- 3.
Once cooled, transfer the mixture to your sanitized fermentation vessel.
- 4.
Add the packet of champagne yeast and mix gently to incorporate. If using, add the nutrient at this point.
- 5.
Seal the fermentation vessel with an airlock and place it in a cool, dark area.
- 6.
Allow fermentation to occur for about 2-4 weeks, checking for bubbling activity.
- 7.
Once fermentation slows, siphon the cyser into clean bottles, leaving sediment behind.
- 8.
Optional: age for an additional 2-4 weeks for enhanced flavors, or enjoy immediately chilled.
- 9.
Serve your cyser over ice for a refreshing sip, garnished with a sprig of fresh mint or an apple slice.
