Combine apple juice and honey in a sanitized fermentation vessel.

Add yeast nutrient, pectic enzyme, acid blend, and wine tannin.
- 3.
Sprinkle wine yeast on top and seal with an airlock.
- 4.
Allow to ferment for 2-3 weeks, then transfer to a secondary vessel.
- 5.
Add 5 crushed Campden tablets before bottling.
- 6.
Let age for 1-2 months before enjoying chilled.
