Witches’ Rock Honey Apple Ale

ingredients
- 1 gallon fresh apple cider
- 1 cup raw honey
- ½ cup light dry malt extract
- 1 oz. Cascade hops (bittering)
- 1 oz. Citra hops (aroma)
- 1 packet of ale yeast (like US-05)
- ½ tsp pectic enzyme (optional, for clarity)
- ½ cup priming sugar (for carbonation)
- Water (as needed)

In a large pot, combine the apple cider and light dry malt extract over medium heat, stirring until dissolved.

Add the raw honey to the mixture and continue to heat until it is fully incorporated. Do not boil.

Remove from heat, and cool the mixture to about 70°F (21°C).
- 4.
Once cooled, transfer to a sanitized fermenter and top up with water if necessary to reach 5 gallons.
- 5.
Add the bittering hops (Cascade), seal the fermenter, and allow to ferment for 7 to 10 days at room temperature.

After primary fermentation, strain the mixture into a sanitized secondary fermenter and add the aroma hops (Citra) and pectic enzyme (if using).

Let it condition for another week before bottling.

When bottling, dissolve the priming sugar in a small amount of water, add to the beer, and bottle. Let bottles carbonate for 1 to 2 weeks.
