- 5 inches of cinnamon sticks
- 1 teaspoon whole cloves
- 1 teaspoon allspice berries
- 4 pounds of fresh apples (preferably Granny Smith and Honeycrisp)
- 6 pounds of honey (wildflower or clover)
- 4 pounds of malt extract (pale or amber)
- 1 package of ale yeast (like Safale US-05)
- 5 gallons of filtered water
- 1 tablespoon lemon juice
- 1 teaspoon potassium metabisulfite

Start by simmering 1 gallon of water, adding cinnamon sticks, cloves, and allspice berries for about 20 minutes to create a spice infusion.

While spices steep, core and chop the apples. Combine the chopped apples with lemon juice and set aside.

After the spices have cooled, strain them, then add the spice infusion back to the pot with 4 gallons of water.

Dissolve the malt extract and honey into the warmed water, stirring well to ensure even mixing.

Add the prepared apples and mix thoroughly; bring the mixture to about 70°F (21°C).

Once cooled, sprinkle the ale yeast and let it ferment in a sanitized fermentation vessel for 1-2 weeks.

After fermentation is complete, carefully siphon the braggot into bottles, leaving sediment behind, and carbonate as desired.

Allow the braggot to age for 4-6 weeks in a cool, dark place before serving. Enjoy chilled or warmed with a sprinkle of nutmeg!
