ingredients
- 2 gallons of fresh apple cider
- 1 quart of honey (preferably wildflower or clover)
- 1 lb of light malt extract
- 1 packet of champagne yeast (or a similar yeast)
- 1 teaspoon of nutrient for yeast
- Optional: 1 cinnamon stick for additional flavor
steps
- 1.
In a large sanitized fermenter, combine the apple cider and honey, stirring until the honey is fully dissolved.
- 2.
Add the light malt extract to the mixture, ensuring an even blend for added depth.
- 3.
Sprinkle in the yeast nutrient, and then pitch the champagne yeast into the mixture.
- 4.
Seal the fermenter with an airlock and place it in a cool, dark area for fermentation, typically around 65-75°F (18-24°C).
- 5.
Allow the cyser to ferment for 2-4 weeks, or until fermentation has stopped (specific gravity stabilizes).
- 6.
If using, add the cinnamon stick during the last week of fermentation to infuse flavor.
- 7.
Once fermentation is complete, siphon the cyser into clean bottles, leaving sediment behind.
- 8.
Cap or cork bottles and allow to age for at least one month to develop the flavors fully.
- 9.
Chill and enjoy neat or in a festive cocktail!
