ingredients
- 1 lb. Crystal Malt (50–65 °L)
- 7.75 lbs. Light LME
- 8.8 lbs. Honey
- 1.5 oz. Northern Brewer hops
- White Labs WLP715 (Champagne) yeast
- Wyeast 1007 (German Ale) yeast
steps
- 1.
Steep Crystal Malt in 2.5 gallons of water at 155°F for 30 minutes
- 2.
Add LME and honey, bring to boil
- 3.
Add hops, boil for 60 minutes
- 4.
Cool, transfer to fermenter, add yeast
- 5.
Ferment for 2 weeks, then transfer for secondary fermentation
- 6.
Bottle and enjoy after aging for 2-4 weeks
