- 1.5 kg (3.31 lbs) clover honey
- 250 ml pure maple syrup
- 1 crushed Campden tablet (at start)
- 1/4 teaspoon wine tannin
- 1 teaspoon acid blend
- 1 dose Pure Brew
- 1 sachet Harris Mead Yeast
- 2 oak barrel chunks
- 1 gallon water
- 1 crushed Campden tablet (after fermentation)
- 1/2 teaspoon potassium sorbate
- 1 sachet Winefine finings

In a large fermentation vessel, mix the clover honey and pure maple syrup with 1 gallon of water until fully dissolved.

Add the crushed Campden tablet to the mixture to sanitize the must.
- 3.
Stir in the wine tannin, acid blend, and Pure Brew.

Sprinkle the Harris Mead Yeast on top of the mixture without stirring.
- 5.
Add the oak barrel chunks to the fermentation vessel.
- 6.
Seal the vessel with an airlock and let it ferment for approximately 4-6 weeks.

Once fermentation is complete, add the crushed Campden tablet and potassium sorbate to stabilize the mead.
- 8.
Gently mix in the Winefine finings according to the package instructions.

Allow the mead to clarify for a few days, then bottle your delicious Honeyed Maple Mead, and enjoy!
