Hoppy Honey Blonde Ale

- 9 lbs Pale Malt (2-row)
- 1 lb Honey (preferably wildflower or clover)
- 1 lb Crystal Malt (40L)
- 0.5 lb Flaked Corn
- 1 oz Cascade hops (bittering, at 60 min)
- 0.5 oz Citra hops (aroma, at 15 min)
- 0.5 oz Motueka hops (aroma, at 5 min)
- 1 pkg American Ale Yeast (Safale US-05 or similar)
- 5 oz Priming Sugar (for bottling)
- Water (enough for a 5-gallon batch)

Begin by heating 3 gallons of water to 165°F.

Add the crushed grains and flaked corn to the heated water, maintaining a temperature of 152°F for 60 minutes.

After the mash, sparge with enough water to collect 6.5 gallons of wort.

Bring the wort to a boil and add the Cascade hops.
- 5.
Boil for 45 minutes, then add the Citra hops.
- 6.
At the final 5 minutes of the boil, add the Motueka hops and stir.
- 7.
Cool the wort quickly using an immersion chiller or other cooling method.

Transfer the cooled wort to a sanitized fermenter and add honey, stirring gently.
- 9.
Pitch the yeast and seal the fermenter with an airlock.
- 10.
Ferment for 1-2 weeks or until fermentation activity ceases.
- 11.
Bottling: Dissolve priming sugar in a small amount of water, add to the bottling bucket, then transfer beer to it.

Bottle and let it carbonate for 1-2 weeks before enjoying your Hoppy Honey Blonde!
