Indonesian Island-Inspired Fried Rice

- 1 cup jasmine rice, cooked and chilled
- 12 medium shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- ½ onion, finely chopped
- 1 carrot, diced
- ½ red bell pepper, diced
- ½ cup frozen peas
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- ½ teaspoon chili powder
- ½ teaspoon turmeric powder
- 2 green onions, sliced diagonally

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, then remove from the skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil and sauté the minced garlic and onion until fragrant and slightly golden.

Add the diced carrot, red bell pepper, and frozen peas. Stir-fry the vegetables until they are tender-crisp.

Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the vegetables.

Add the cooked rice to the skillet and break it up with a spatula, stirring to combine it evenly with the vegetables.
