Iron-Boosting & Immune-Enhancing Asian Stir Fry

This delicious stir fry packs a punch of iron and vitamin C with sesame and soy marinated tofu, shitake mushrooms, broccoli, and red bell peppers. Perfect for a filling, nutrient-dense dinner.

- 14 oz tofu, pressed and cubed
- 1/4 cup sesame oil
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp honey
- 3 garlic cloves, minced
- 1/2 tsp ground ginger
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes
- 8 oz shitake mushrooms, sliced
- 1 red bell pepper, sliced
- 2 cups broccoli florets
- 2 tbsp sesame seeds

In a small bowl, whisk together sesame oil, soy sauce, lime juice, honey, garlic, ginger, garlic powder, and red pepper flakes. Pour over cubed tofu and marinate in the fridge for at least 30 minutes.

Heat a large skillet over medium heat and add the marinated tofu (leaving marinade in bowl). Let cook for 3-4 minutes until slightly browned, then add sliced mushrooms and red bell pepper. Stir fry for another 5-7 minutes until vegetables are tender.

Add broccoli to the skillet and pour the remaining marinade over the vegetables. Stir fry for another 2-3 minutes until broccoli is bright green and tender.
