Spicy Tofu Noodle Stir-Fry

- 8 oz tofu, cubed
- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup snap peas
- 4 green onions, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon ginger, grated
- 1 tablespoon sesame seeds (optional)

Cook rice noodles according to package instructions. Drain and set aside.

In a large pan, heat vegetable oil over medium-high heat. Add tofu cubes and cook until golden brown, about 5 minutes. Remove tofu from the pan and set aside.
