Asian Fusion Tofu Stir-Fry

- 14 oz firm tofu, cubed
- 2 tbsp dark soy sauce
- 2 tbsp light soy sauce
- 1-inch piece of fresh ginger, grated
- Handful of fresh coriander leaves, chopped
- 6 oz shitake mushrooms, thinly sliced
- 1 red bell pepper, julienned
- 2 medium carrots, julienned
- 4 oz snow peas
- 8 oz cooked noodles of your choice (such as rice noodles or udon noodles)
- 2 tbsp vegetable oil, divided
- Salt and pepper, to taste

Press tofu to remove excess moisture, then marinate in a mixture of dark soy sauce, light soy sauce, and grated ginger for 15 minutes.

Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add tofu cubes and cook until browned on all sides. Remove from the skillet and set aside.
