Iron-Boosting Tacos with Zesty Salsa

- 8 small corn or wheat tortillas
- 2 cups shredded red cabbage
- 1/4 cup finely chopped fresh cilantro
- 1 avocado, diced
- 2 limes, quartered

- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 pint cherry tomatoes, chopped
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, finely diced
- Juice of 2 limes
- 1/4 cup finely chopped fresh cilantro

In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Add chili powder, garlic powder, onion powder, salt, and pepper, and stir until evenly combined.

In a separate bowl, combine chopped cherry tomatoes, diced red onion, minced garlic, diced jalapeno, lime juice, and cilantro. Season with salt and pepper, to taste.

Preheat tortillas in a separate skillet or over an open flame until lightly charred.
