These stuffed bell peppers are a delicious way to pack in the iron. Filled with lean ground beef, quinoa, and spinach, this dish is not only high in iron but also in fiber and protein. A perfect weeknight meal that's easy to make and sure to satisfy!

- 4 large bell peppers, halved and seeded
- 1 lb. lean ground beef
- 1 cup cooked quinoa
- 1 cup spinach, chopped
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp. olive oil
- 1 tsp. cumin
- Salt and pepper to taste

Preheat oven to 350°F.

Heat olive oil in a skillet over medium-high heat. Add onion and garlic and cook until softened.

Add ground beef to the skillet and cook until browned. Drain any excess fat.

Add cooked quinoa, spinach, cumin, salt, and pepper to the skillet. Stir until combined.

Stuff each bell pepper half with the beef and quinoa mixture. Place on a baking sheet and bake for 25-30 minutes, or until the peppers are tender.
