Italian Borek

A cheesy and savory twist on traditional borek, filled with Italian sausage, spinach, mozzarella, and ricotta. Perfect for brunch or a light dinner.
ingredients
- 1 lb Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 5 oz baby spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 8 sheets phyllo dough
- 1/4 cup melted butter

Preheat oven to 375°F.

In a large skillet, brown Italian sausage over medium heat. Add onion and garlic and cook until onion is translucent.

Add spinach, salt, and black pepper to the skillet and cook until spinach is wilted.

In a separate bowl, mix together the ricotta, mozzarella, and Parmesan cheese.

Lightly brush a baking dish with melted butter. Layer 2 sheets of phyllo dough in the bottom of the dish, brushing each layer with butter. Add 1/3 of the sausage mixture on top of the phyllo dough, then 1/3 of the cheese mixture. Repeat layers twice more, ending with cheese mixture on top.

Cover with 2 more sheets of phyllo dough, brushing each layer with butter.

Use a sharp knife to cut through the top layer of phyllo dough and cheese mixture into 8 equal pieces.

Bake for 25-30 minutes or until golden brown. Serve hot.
