Italian Sausage and Potato Frittata

- 6 Italian sausages, casings removed
- 3 cups russet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 cup shredded mozzarella cheese
- 8 large eggs
- 1/4 cup milk
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
