Squash Pesto Pasta with Italian Sausage

- 4 medium summer squash
- 1 lb Italian sausage, removed from casings
- 1/2 cup sundried tomatoes, chopped
- 3 tablespoons tomato paste
- 1/4 cup pesto sauce
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste

Slice the summer squash lengthwise into thin noodle-like strips using a spiralizer or a vegetable peeler.
