Italian Stuffed Zucchini Boats
" Zucchini Boats Ingredients 1. 4 large zucchini 2. 1/2 lb ground beef* 3. 1 cup cooked rice 4. 3 slices of Italian bread moistened 5. 2 cups grated parmesan cheese 6. 1 egg, 2 cloves garlic, basil leaves, parsley, oregano 7. 1 can crushed tomatoes or puree sauce 8. Salt and pepper to taste In large mixing bowl, put meat, rice, bread, cheese, garlic, herbs, salt and pepper. Cut zucchini in half lengthwise and carve out most of flesh and cut the flesh in half horizontally and blanche in boiling water. Remove. Go back to the mixing bowl, add flesh of zucchini and mix thoroughly. Then fill the shells of zucchini to brim and place in a greased Pyrex dish. Pour crushed tomatoes over them; sprinkle with Parmesan cheese and bake slowly in 350 ⁰ oven. Serves 4."
