Italian Stuffed Zucchini Boats

- 4 large zucchini
- 1/2 lb ground beef
- 1 cup cooked rice
- 3 slices of moistened Italian bread
- 2 cups grated Parmesan cheese
- 1 egg
- 2 cloves garlic

- 1 can crushed tomatoes or puree sauce
- Salt and pepper to taste

In a large mixing bowl, combine ground beef, cooked rice, moistened Italian bread, grated Parmesan cheese, egg, garlic, herbs, salt, and pepper.

Cut zucchini in half lengthwise and carve out most of the flesh. Cut the flesh into small pieces, blanche in boiling water, and remove.
