ingredients
- 4 ounces of glass noodles
- 1 cup of chopped kimchi
- 1 avocado, diced
- 1 cup of black beans, drained and rinsed
- ½ cup of pickled carrots
- 2 boiled eggs, halved
- 1 tablespoon of fish sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- A handful of fresh cilantro leaves

In a pot of boiling water, cook glass noodles for 4-5 minutes or until tender. Drain and rinse under cold water.

In a small bowl, whisk together fish sauce, rice vinegar, and honey.

Divide the cooked glass noodles between two serving bowls. Arrange kimchi, avocado, black beans, pickled carrot, and boiled eggs on top of the noodles.

Drizzle the prepared dressing over each bowl and top with fresh cilantro leaves. Serve immediately.
