Tender bell peppers stuffed with savory lean ground turkey, fire-roasted tomatoes, and herbs. An easy weeknight meal that's both nutritious and delicious.
ingredients
- 4 bell peppers, tops removed and seeded
- 1 lb lean ground turkey
- 1 onion, diced
- 1 can fire-roasted tomatoes, drained
- 1 cup cooked brown rice
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese

Preheat oven to 375°F.

In a large skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.

Add onion and garlic; sauté until onion is tender.

Stir in the fire-roasted tomatoes, rice, oregano, basil, salt, and pepper.

Spoon mixture into the peppers and place them in a baking dish.

Sprinkle the cheese on top of each pepper.

Bake for 30 minutes, or until peppers are tender and cheese is melted.
