Zesty tomato broth, tender chicken, and hearty veggies in a lemony twist.
ingredients
- 1 lb chicken breast, diced
- 6 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup spinach
- 1/4 cup lemon juice
- 1 can diced tomatoes (14.5 oz)
- Salt and pepper to taste
- 1 tsp ginger
- 1 tsp oregano

Sauté chicken with ginger and oregano until browned.
