Lemon Herb Cod with Garlic Broccoli and Quinoa

- 2 cod fillets (6 oz each)
- 1 lemon, thinly sliced
- 2 sprigs fresh dill
- 2 sprigs fresh thyme
- Salt and black pepper to taste
- ½ lb Costco frozen broccoli
- 2 cloves garlic, minced
- 1 cup cooked quinoa
- 1 tablespoon olive oil

Preheat the sous vide water bath to 130°F (55°C).

Season the cod fillets with salt and black pepper, then place each fillet in a separate sous vide bag. Add a few lemon slices, a sprig of dill, and a sprig of thyme to each bag before sealing them.

Immerse the bags in the water bath and cook for 30 minutes.

While the cod cooks, reheat the Costco frozen broccoli in the microwave according to package instructions.

In a pan over medium heat, sauté the minced garlic in olive oil for 1 minute. Add the heated broccoli, season with salt and black pepper, and cook for an additional 3-4 minutes until tender.

Reheat the cooked quinoa according to package instructions.

Once the cod is ready, remove from the sous vide bags and discard the herbs. Sear each fillet in a hot skillet for about 1 minute on each side.
