Lemon Garlic Salmon with Roasted Vegetables

- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- 2 cups broccoli florets
- 2 cups baby carrots
- 1 red bell pepper, sliced
- Fresh parsley, for garnish

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a small bowl, combine olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper.

Arrange the salmon fillets on one side of the prepared baking sheet and drizzle the herb mixture over the salmon.

In a separate bowl, toss the broccoli florets, baby carrots, and red bell pepper with the remaining herb mixture.

Transfer the seasoned vegetables to the other side of the baking sheet, arranging them in a single layer.
