Tender eye of round steak seared with onions, potatoes, and kale in a zesty lemon herb sauce. A flavorful and healthy stir fry that's perfect for a quick weeknight dinner.
ingredients
- 1 lb eye of round steak, thinly sliced
- 1 onion, sliced
- 2 potatoes, diced
- 2 cups kale, chopped
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
