ingredients
- 8 oz pasta
- 4 chicken thighs
- 2 cups packed spinach
- 1 red pepper, diced
- 2 Roma tomatoes, chopped
- 2 stalks celery, diced
- 1/2 cup pitted kalamata olives
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp dried oregano
- Salt and pepper, to taste
