ingredients
- Spring Water: 5 Gallons
- Wildflower Honey: 1 Gallon
- Lalvin ICV D-47 Yeast: 1 Packet
- Large Orange: 1, sliced into quarters
steps
- 1.
Bring the spring water to a boil in a large pot, ensuring it’s thoroughly heated.
- 2.
Remove from heat and slowly stir in the wildflower honey, mixing until completely dissolved.
- 3.
Allow the honey-water mixture to cool to room temperature to protect the yeast.
- 4.
Once cool, sprinkle the Lalvin ICV D-47 Yeast over the surface and gently stir to combine.
- 5.
Carefully pour the mixture into a sanitized 5-gallon glass carboy.
- 6.
Take the large orange, slice it into quarters, and add it to the carboy for a splash of citrus flavor.
- 7.
Seal the carboy with an airlock to keep contaminants out while allowing CO2 to escape.
- 8.
Store the carboy in a cool, dark place and let it ferment for 4-6 weeks, checking progress until the desired sweetness is reached.
- 9.
After fermentation, siphon the mead into a clean glass carboy to clarify.
- 10.
Age the mead for at least 6 months in a cool location before enjoying its full, harmonious flavors.
