Low Acid Chicken and Rice Bowl

- 1 lb boneless, skinless chicken breasts
- 2 cups white rice
- 4 cups low-sodium chicken broth
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 cup carrot, diced
- 1 cup zucchini, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces

In a large pot or Dutch oven, combine rice and chicken broth. Bring to a boil, reduce heat, and simmer for 18-20 minutes or until rice is tender and fully cooked.

In the meantime, season chicken breasts with paprika, garlic powder, oregano, salt, and black pepper. Heat a non-stick skillet over medium heat, add chicken breasts to the skillet, and cook for 5-6 minutes on each side or until cooked through.

Remove chicken from skillet and let rest on a cutting board for 5 minutes, then slice into bite-sized pieces.

In the same skillet, add diced carrot and cook for 3-4 minutes or until soft. Add diced zucchini and green beans to the skillet and cook for another 3-4 minutes until vegetables are tender.
