Luscious Tart Cherry Almond Cake

- 2 cups tart cherries, pitted
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon almond extract
- ½ cup whole milk

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a mixing bowl, combine the flour, baking powder, and salt. Set aside.

In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the almond extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.

Gently fold in the tart cherries and sliced almonds, reserving a few cherries for garnish.

Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Meanwhile, prepare the almond glaze by whisking together the powdered sugar, milk, and almond extract until smooth.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Once cooled, drizzle the almond glaze over the cake, allowing it to drip down the sides. Garnish with the reserved tart cherries.
