Meadowsweet & Elderberry Mead

- 1 gallon spring water
- 2 ounces dried meadowsweet leaf and flower (or 0.5 oz teabags)
- 8 ounces dried elderberries
- 1/2 teaspoon pectic enzyme
- 1 teaspoon yeast nutrient
- 1/2 packet of Lalvin D-47 yeast
- 1 1/2 36-ounce jars (approximately 4 pounds) of Dark Wildflower Honey (Unpasteurized)

In a large pot, bring 1 gallon of spring water to a gentle boil.

Remove the pot from heat and add the dried meadowsweet and elderberries.
- 3.
Steep the mixture for 30 minutes, then strain out the herbs and berries.
- 4.
Allow the liquid to cool to room temperature.
- 5.
Once cooled, add the pectic enzyme and yeast nutrient, stirring to combine.

Gradually pour in the dark wildflower honey, mixing until dissolved.

Sprinkle the Lalvin D-47 yeast over the surface and let it rest for 15 minutes, then stir gently.

Transfer the mixture to a sanitized fermentation vessel, leaving some headspace.

Seal the vessel with an airlock and place in a dark, temperature-controlled area to ferment for 2-3 weeks.

After fermentation, carefully siphon into clean bottles, leaving sediment behind.

Allow to age for an additional few weeks for flavors to meld before enjoying.
